The Balancing Siphon Coffee Maker was invented back in 19th century in the Europe.The process involves using an alcohol burner to boils the water inside the Water Retainer to 212 F.
Boiled water is forces through the pipette and into the brewing flask by the vapor pressure in the Water Retainer as it boiled. Water temperature is lost as it travels from the Water Retainer to the Brewing flask. Which in turn, making it an ideal temperature for steeping the coffee grounds.
As water leave the Water Retainer, it is lifted by the counter weight. As it rises, it released the alcohol burner extinguisher lid and extinguish the alcohol burner.
Strong vacuum is soon formed as the temperature drops in the Water Retainer. In the meanwhile, it provides just the right amount of time for percolation before the strong vacuum literally siphons every bit of the extracted essence from the coffee grounds. Coffee grounds are effectively filtered away in the brewing flask by the permanent filter.
Break the Water Retainers vacuum by loosening the top plug of the Water Retainer, turn on the spigot and share that splendid cup of Joe. The entire process is visual spectacular and the coffee brewed can best be described as clean, great purity of flavor, aromatic with no bitterness added during the brewing process.
