Using Stoneware safely: The advantage to stoneware is the even-cooking, non-burning surface it provides. Fill as much of the surface with food as possible before cooking to take full advantage of this effect. A sudden change in temperature can cause the stoneware to crack. To avoid thermal shock (fast temperature shift) allow the pan to cool down before it goes into the freezer, refrigerator, or under cold water for cleaning.It is recommended to wait until the pan is at room temperature, after taking it out of the freezer, and before placing it in the oven or microwave.Thaw frozen foods before cooking them in stoneware to prevent cracks from forming.
